Bikini

Serves 10 servings

Ingredients for the Clementine Cordial (produces 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

Ingredients for the Drink (yields 850ml, to serve 10)

400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch

Directions

For the Citrus Syrup: Combine the listed items inside a pan, bring to a light boil, agitating to dissolve. Then, turn off the burner allowing it to cool down entirely. Transfer to a clean bottle, cap it and refrigerate it in the refrigerator, where it will keep for up to four weeks.

Preparing the Batch Mix: Pour every spirits and syrup into a sizeable container, allow it to infuse for one hour, then strain , ideally through cheesecloth, to ensure it's perfectly clear.

When ready to serve: Measure 85ml from the premix to a mixing glass containing ice, gently stirring lightly for one minute until cold. Filter into a cold coupe glass or a similar vessel, garnish with the cranberries adding the final touch with a light spray of mandarin oil over the top.
